Istria is often introduced with a photograph of the sea. Yet some of its strongest impressions begin inland, where hilltop villages rise above vineyards and forested valleys. This is a landscape that changes with the season and is best approached through small roads rather than a checklist of viewpoints.
Rovinj makes an evocative coastal beginning. Walk the old town before the busy hours and take time along the wooded shoreline of Golden Cape. Then travel inland to Motovun, perched above the Mirna valley. Its medieval streets offer an architectural story, while the forests below connect the town to the region's renowned truffle traditions.

A good food itinerary follows what is in season. Olive oil and wine are part of the everyday culture; truffles become particularly important in autumn. You do not need a formal tasting at every stop. Often a local restaurant, a short vineyard visit and a conversation about the harvest reveal more than a crowded day of appointments.
Plan for hill-town access and local parking rules, especially where historic cores restrict vehicles. Avoid treating Istria as a race between Rovinj and Motovun: an extra afternoon and a second night create the chance to appreciate the transition between coast and countryside.
